VINEYARDS OF ORIGIN
14 Chardonnay vineyards, with an average age of 38 years, located in the municipalities of Erbusco, Adro, Corte Franca, Iseo and Passirano.
6 Pinot Noir vineyards, with an average age of 33 years, located in the municipalities of Erbusco, Iseo and Passirano.
2 Pinot Bianco vineyards, with an average age of 27 years, located in the municipality of Passirano.
HARVEST
2013. Winter with frequent snowfall, but rather mild. Rainy and very cold spring. First phases of the vine cycle marked by these meteorological obstacles: late budding and reduced bud fertility. Flowering took place at the beginning of June, always accompanied by unfavorable weather conditions. From mid-April until the second ten days of June it rained every 2 days, but with the arrival of summer the weather radically changed and we moved on to the extreme weather of recent years, with highs that approached 40°C . Storms arrived at fairly regular intervals to quench the thirst of the vines. When the grapes were ready for harvest, after August, abundant rain heavily marked the vintage. After many years we saw the gray mold again which made it necessary to sort the bunches both in the countryside and in the cellar. Never like this year has our grape sorting and washing plant been crucial in changing the face of this apparently difficult Vintage, but which we have made valuable. The harvest took place during the last ten days of August with an average yield per hectare of 7,500 kilograms of grapes, equivalent to 2,930 liters of wine (yield in wine: 39%).
WINEMAKING
Annamaria Clementi is the fruit of the search for excellence, both in the vineyard and in the cellar. In compliance with the Ca' del Bosco Method, the grapes, harvested by hand in small boxes, are promptly coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying. The base wines are obtained exclusively from very first pressing musts. The alcoholic fermentation takes place in small oak barrels made with selected wood and seasoned for at least 3 years. Here it remains on its yeasts for another 6 months, also carrying out the malolactic fermentation. No compromise, no concession: only the wine from the best barrels, of the 26 base wines of origin, is tapped to give rise to Annamaria Clementi. A pair of flying tanks transfer the base wines by gravity from the barriques to the assembly tank. This is followed by bottling and a very long refinement in contact with yeasts, which lasts for more than 8 years to make its profile unique: an absolute Franciacorta. Dégorgement occurs in the absence of oxygen, using a system unique in the world, designed and patented by Ca' del Bosco. This avoids oxidative shock and further additions of sulphites and makes our Franciacorta purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.
