We grow courgettes in the open field in April, and harvest them manually in June and July. We wash them, select them, cut them into slices with the peel, salt them and let them dry in the sun on the frames of our farm for 3-4 days. After which the courgettes are again selected, washed and flavored with Mediterranean spices. Finally they are put into jars in extra virgin olive oil. To obtain 500 g of dried courgettes you need about 10 kg of fresh ones, and over 120 hours of processing!

It is with this slow methodology that respects the natural ripening and drying times that the vegetables preserve all their nutritional richness. As our grandfather taught us.

Excellent as an appetizer or side dish, but also for seasoning rice salads or cold pasta, or for seasoning pizza: they are crunchy and with a delicious sunny taste!
