For our purees we only use fresh tomatoes grown in the open field. We harvest the tomatoes one by one in July and August and process them a few hours after harvesting. We adopt a slow and gentle processing system, with lower yields, but with excellent results: the color of the tomato remains bright and bright, the taste is that of the purees you found in your grandmothers' pantries, the consistency is full-bodied, compact and dense. We do not add salt, but only a very fresh basil leaf.
For La Dolce we use the cherry tomato, which is characterized by its intense red color similar to purple and its sweet taste. This tomato produces a puree with a fine consistency and a delicate, particularly sweet flavour. It is the puree that everyone likes, even children, it can be used in classic first courses, but also in meat-based second courses.
