Tuscany reserves a surprise everywhere. Each village has its own peculiarity, be it landscape, historical-artistic or culinary. Lamporecchio , a town in the province of Pistoia, has the honor of having given birth to this small round, thin-thin, fragrant and anise-scented dessert: the Brigidino di Lamporecchio, "a dessert or rather a special toy in Tuscany where to meet at all the country fairs and festivals..." as Pellegrino Artusi defines it in "Science in the kitchen".
The recipe for Brigidino di Lamporecchio is simple, consisting of just four ingredients: eggs (the Desideri ones are fresh and 0 km), flour (Farina, with a capital letter, Desideri uses type 1 flour), sugar (Italian) and anise.
This last ingredient tells us a beautiful story relating to the birth of this product, the result of an error from which we still benefit today.
In the convent of Santa Brigida di Lamporecchio the sisters had the task of preparing the hosts used in the celebration of mass for the surrounding parishes. Fate would have it that one day the nuns made some mistakes in the dough and, in order not to throw away the work done, they added eggs, sugar and anise, giving life to a tradition that has been handed down to the present day.
The Brigidino di Lamporecchio has a characteristic round shape, with irregular edges, a golden yellow color and a stylized flower stamped in the center, the one found in the ancient molds with which it was originally produced.
It's difficult to explain Brigidino... it must be tried, or rather munched and like cherries, one leads to another. It loves the company of a good Vinsanto and so it can become an original dessert at the end of a meal. It loses all its innocence if dipped in chocolate, a real indulgence worth sharing. It goes wonderfully with ice cream. But it could also be a modern snack characterized by authenticity.
